Story

Born in 1985, Giovanni was immediately fascinated by the catering world. When he was a boy he discovered his endless passion for the art of making pizza, while he was working in his uncle’s historical “Antonio e Antonio” restaurant on the Caracciolo seafront in Naples. After a long traineeship as a pizza maker and leavening expert, Giovanni settled in the city of flowers, where he opened his pizzeria in 2018. Devoted to the Neapolitan tradition, now an adopted Sanremo citizen, here he offers his personal vision of the evolving Neapolitan pizza, with which he tells the traditions and the excellent food products of two cities that are so distant, but at the same time very close. Thank to his skills as a leavening expert, his attention to nutritional aspect and sustainability and to his continuous research for excellence in raw materials, Giovanni Senese has achieved important awards by becoming “Ambasciatore del Gusto” or Taste Ambassador and also the only Slow Food Alliance pizza maker in Liguria.

Giovanni uses all his experience as a leavening expert to honour his Parthenopean origin and to pursue his vision of evolving Neapolitan pizza.

His in-depth work on searching the wholemeal flours, allows him to obtain light and highly digestible doughs that enhance all the flavours and aromas of the toppings.

Giovanni’s philosophy of sustainability, self-production and absolute quality, has led to the development of high quality toppings, where seasonality, balance and cleanliness of flavour are the most important elements.

His attention to the selection of the best products from his garden, local products and Slow Food presidia, enhances and narrates the excellence of Italy, integrating a respectful reinterpretation of the tradition from Giovanni’s memories and point of view.
