THE EVOLVING NEAPOLITAN PIZZA

The classic shape of the Neapolitan pizza, but constantly evolving in terms of doughs and toppings. In fact, Giovanni starts from the classic round shape with a high rim typical of the Neapolitan pizza. From there he experiments with whole wheat and semi-whole wheat flours, elaborated toppings and combinations reasoned down to the smallest detail.

Giovanni offers a reinterpretation even for the most traditional pizza, his own vision of the great Neapolitan classics in order to give a taste of the ancient aromas, but in a modern and entirely personal key.

STORIES OF LAND AND SEA

Giovanni loves to tell and to enhance his favourite places with his pizza: Liguria and Campania.

Thanks to his work in recovering the Ligurian and Campanian traditions, Giovanni brings to the table products and recipes from his land and sea, reinterpreting them with knowledge and creativity on pizzas.

The total focus on the origin and the sustainability of his products is translated into fillings characterised by rigorous seasonality and a balance of flavours that is always perfect and clear.

SUSTAINABILITY

Sustainability related to raw materials is a fundamental principle that guides Giovanni’s choice for every single ingredient and allows him to offer an evolving Neapolitan pizza experience.

The direct cultivation of fruits and vegetables and the careful selection of raw materials from small producers and Slow Food presidia create a menù characterised by a total valorization of the “Km0” concept: from the almost exclusive use of vegetables from our synergistic garden to the choice not to use salmon, tuna or other species affected by intensive fishing in favour of our local fish.
