Giovanni’s focus on the quality of raw materials and the short supply-chain, led him to the development of a synergistic garden of 8 strips of land in the hills of San Remo: a biodiversity paradise where vegetables, aromatic herbs and fruit trees coexist. Here, thanks to his passion and to the microclimate of the Riviera dei Fiori, vegetables for the seasonal pizzas are grown alongside all the aromatic herbs used to enrich the aroma of the doughs.

THE SYNERGISTIC GARDEN

Giovanni’s synergistic garden consists of 8 strips of land located in the hills of San Remo cultivated in full respect of nature in a virtuous circle between different plant species that are able to self-fertilise the soil. This seasonal cultivation project follows Giovanni’s desire to offer the best raw materials in their purest and freshest form, without any forced process.

MY SYNERGISTIC GARDEN

Giovanni’s garden became the main influence of this pizza, designed to present his philosophy of pizza, cuisine and sustainability. A composition of seasonal vegetables professionally executed in a contemporary pizza that becomes an experience.

SUSTAINABILITY

Sustainability related to raw materials is a fundamental principle that guides Giovanni’s choice for every single ingredient and allows him to offer an evolving Neapolitan pizza experience.

The direct cultivation of fruits and vegetables and the careful selection of raw materials from small producers and Slow Food presidia create a menù characterised by a total valorization of the Km0 concept: from the almost exclusive use of the vegetable from our synergistic garden to the choice not to use salmon, tuna or other species affected by intensive fishing in favour of our local fish.
